			<content:encoded><![CDATA[<p>Your whites aren&#039;t peaking because they might have some yolk in them and fat keeps them from becoming firm.  You also should let your white become foamy before adding sugar and you want to add sugar very slowly like 1 tablespoon at a time and waiting about 30 secs between each addition.  Also they vanilla will keep them from peaking so you have to add that last after you have reached the peak you need.  Here&#039;s an easy recipe though for what you have going already.Coconut Macaroons6 oz sugar = about 1 1/3c6 oz shredded coconut = about 3ish cups1 oz corn syrup = about 2 tablespoons1/2 teaspoon vanilla = you&#039;re good on this one2 teaspoon pastry flour = you can use all purpose flour but they&#039;ll be just a little tougher1 pinch salt = 1/4 teaspoon3 ea egg whites = you&#039;re ok on this one too, add another 1/3 c of sugar and 1/2 c more coconut just this one time since you already have 4 whites in the mixCombine everything and let it sit for an hour on the counter top.  Stir it up well and use a spoon to scoop it up into same size portions on the pan.  Bake it at 350F until they look golden brown on the outside.
